Ingredients
  

Main Ingredients

  • 1 lb ground beef can be substituted with a plant-based protein
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth can substitute with chicken or vegetable broth
  • 1 cup macaroni pasta whole grain or gluten-free options can be used
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Instructions
 

Preparation

  • In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Add onions and garlic to the pot and cook until softened.

Cooking

  • Stir in diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
  • Add macaroni and reduce heat to a simmer. Cook until macaroni is tender, about 8-10 minutes.
  • Garnish with fresh parsley before serving.

Notes

Serve hot with crusty bread or side salad. Add red pepper flakes for a spicier kick. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat with added water or broth to loosen.
