Preparation

  • Heat some olive oil in a large pot over medium heat.
  • Add the diced onions and carrots, sautéing them until softened, about 5 minutes.
  • Season the chicken pieces with salt and pepper, then add them to the pot. Cook until browned on all sides.

Cooking

  • Stir in the egg noodles, then pour in the chicken broth along with fresh thyme and rosemary.
  • Increase the heat and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes.
  • Check for doneness; the noodles should be cooked and the chicken tender.
  • Taste and adjust the seasoning with salt and pepper before serving.

Notes

For crispier chicken skin, sear it longer before adding other ingredients. You can add red pepper flakes for a kick and feel free to throw in additional vegetables like peas or corn for variety.
