  • 1 lb Bite-sized chicken pieces Bone-in chicken recommended for juiciness.
  • 1 cup Jasmine rice Can substitute with basmati or long-grain rice.
  • 2 cups Chicken broth Use low-sodium for healthier option.
  • 1 cup Mixed vegetables (like peas, carrots, and bell peppers) Feel free to use fresh or frozen veggies.
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • to taste Salt and pepper
  • Olive oil For sautéing.

Preparation

  • Gather all your ingredients and prepare everything by chopping the vegetables, dicing the onion, and mincing the garlic.

Cooking

  • In a large pot, heat a bit of olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until they are soft and translucent.
  • Add the bite-sized chicken pieces to the pot and cook until golden brown on the outside.
  • Stir in the mixed vegetables and combine well.
  • Pour in the jasmine rice and chicken broth, along with the paprika, garlic powder, and a good sprinkle of salt and pepper.
  • Bring the mixture to a boil, stirring gently to prevent sticking.
  • Reduce heat to low, cover, and let it simmer for 20-25 minutes.
  • After the cooking time is up, remove the pot from heat and let it sit for a couple of minutes before fluffing the rice with a fork.
  • Serve hot and enjoy!

Notes

Use fresh herbs like rosemary for added flavor. Leftovers can be stored in the refrigerator for up to three days.
