Preparation

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the sliced onions to the skillet and sauté until they become soft and caramelized, about 20-25 minutes.
  • Once the onions are beautifully caramelized, stir in the mustard and fresh thyme.
  • Pour in the broth and let the mixture simmer for another 10-15 minutes.
  • Finally, season with salt and pepper to taste, then serve warm.

Notes

Use fresh thyme whenever possible; it makes a difference! Don’t rush the caramelization—allow those onions to develop their sweetness. Store any leftover onion gravy in an airtight container in the refrigerator for up to 3 days. To reheat, just warm it up gently on the stovetop or in the microwave, adding a splash of broth if it thickens too much.
