  • 1 teaspoon mustard Adds a zing to enhance the flavor.
  • 1 tablespoon fresh thyme, chopped Fresh herbs boost flavor.
  • to taste salt and pepper Season to your liking.
  • 2 cups vegetable or chicken broth The base of your gravy; use low-sodium if preferred.

Preparation

  • Start by thinly slicing the onions to help them caramelize evenly.
  • In a large skillet, combine butter and olive oil over medium heat. Allow the butter to melt and become bubbly.
  • Add the sliced onions to the skillet and stir to coat them in the buttery olive oil.
  • Lower the heat to medium-low and continue cooking the onions for about 15-20 minutes, stirring often until they are golden and fragrant.
  • Once caramelized, add mustard, chopped thyme, salt, and pepper, and stir for an additional minute.
  • Pour in the broth, scraping up any bits that have stuck to the skillet.
  • Bring the mixture to a gentle simmer and cook for about 10 minutes to thicken and meld flavors.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve warm over mashed potatoes, chicken, or meatloaf.

Notes

Use medium heat for caramelization and consider using fresh thyme for enhanced flavor. Leftovers can be stored in an airtight container in the fridge for 3-4 days and can be reheated on the stove.
