  • 2 cups rice Use white or brown rice
  • 4 pieces chicken thighs, bone-in and skin-on Ensure chicken is bone-in for flavor
  • 4 cups chicken broth Can use low-sodium
  • 4 tablespoons butter For sautéing
  • 4 cloves garlic, minced Enhances flavor
  • 1 teaspoon paprika For seasoning
  • to taste Salt and pepper For seasoning
  • as needed Fresh parsley for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe pan, melt the butter over medium heat and sauté the garlic until fragrant.
  • Add the rice and stir to coat it in the butter, cooking for about 2 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Season the chicken thighs with paprika, salt, and pepper.
  • Place the seasoned chicken thighs on top of the rice.
  • Cover the pan with a lid or aluminum foil and bake in the preheated oven for 30-35 minutes until the chicken is fully cooked and the rice is tender.
  • Garnish with fresh parsley before serving.

Notes

Make sure to use bone-in and skin-on chicken thighs for extra flavor and juiciness. You can substitute white rice with brown rice, but adjust the cooking time since brown rice takes longer to cook. For added flavor, consider adding some vegetables like peas or carrots to the rice before baking. If you prefer crispy skin on the chicken, you can broil it for a few minutes after baking.
