  • 2 lbs Swiss steak (beef)
  • 1 cup Beef broth
  • 1 Onion, sliced
  • 2 cloves Garlic, minced
  • 1 cup Diced tomatoes (canned or fresh)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried thyme (optional) Fresh herbs can be used for better aroma and flavor.
  • 1 tablespoon Fresh parsley (for garnish), chopped

Preparation

  • Preheat your oven to 325°F (165°C).
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Pat the Swiss steak dry, season with 1 teaspoon of salt and 1/2 teaspoon of black pepper, and sear it on both sides until browned. Remove the steak and set aside.
  • In the same skillet, sauté the sliced onion and minced garlic for about 3-4 minutes until soft and fragrant.
  • Add diced tomatoes and beef broth to the skillet, stirring to scrape up brown bits for added flavor.
  • Season the mixture with Worcestershire sauce and dried thyme (if using).
  • Transfer the seared steak to a baking dish and pour the broth and vegetable mixture over it.
  • Cover the dish tightly with aluminum foil.
  • Roast in the oven for about 2 to 2.5 hours or until the steak is tender.
  • Check for tenderness after roasting. If not fork-tender, re-cover and roast longer.
  • Once cooked, let the Swiss steak rest for a few minutes, slice it, and garnish with fresh parsley before serving.

Notes

Tips include ensuring to sear the meat well for flavor enhancement and using a meat thermometer for checking tenderness. For enhanced flavor, marinate overnight and avoid rushing the cooking process.
