Zucchini Boats Ingredients

  • 4 medium medium zucchinis Choose firm zucchinis for the best texture.
  • 1 cup marinara sauce You can use other types of sauce, like pesto or Alfredo.
  • 1 cup shredded mozzarella cheese Feel free to mix with other cheeses like cheddar.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Fresh basil for garnish Optional.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out some of the flesh to create boats.
  • Place the zucchini boats on a baking sheet lined with parchment paper.

Filling

  • Spread marinara sauce evenly into each zucchini boat.
  • Sprinkle mozzarella and Parmesan cheese on top of the sauce.
  • Season with Italian seasoning, salt, and pepper.

Baking

  • Bake for about 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  • Remove from the oven and garnish with fresh basil if desired.
  • Serve warm.

Notes

These zucchini boats can be served as a main dish or a fun side. Pair them with a light salad or some crusty bread for a complete meal. Store leftovers in an airtight container in the fridge for 3-4 days. To reheat, place in the oven at 350°F or microwave if in a hurry.
