Main ingredients

  • 4 medium medium zucchinis Choose firm zucchinis without soft spots for best results.
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh basil Optional garnish.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out some of the flesh to create boats.
  • Place the zucchini boats on a baking sheet lined with parchment paper.

Assembly

  • Spread marinara sauce evenly into each zucchini boat.
  • Sprinkle mozzarella and Parmesan cheese on top of the sauce.
  • Season with Italian seasoning, salt, and pepper.

Baking

  • Bake for about 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  • Remove from the oven and garnish with fresh basil if desired. Serve warm.

Notes

These zucchini boats can be paired with a light salad or crusty bread. They are great for potlucks or gatherings. For a crispy top, broil the zucchinis for the last few minutes of baking.
