  • 4 zucchini (rinsed and dried) Choose firm zucchinis without blemishes.
  • 1 tablespoon butter, melted Can substitute with olive oil for a different flavor.
  • 0.5 teaspoon granulated garlic Use more to taste, adds great flavor.
  • 2 tablespoons Parmesan cheese Key ingredient that becomes crispy and golden.
  • 1/4 teaspoon fresh ground pepper Adjust to taste.
  • Kosher salt To taste.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking pan with parchment paper or a silicone baking mat.
  • Trim off the stem ends of the zucchinis and cut them in half lengthwise, laying them skin-side down on the prepared baking pan.
  • Gently score the flesh side of each zucchini half with a fork to allow flavors to penetrate.

Baking

  • Brush the scored side of the zucchini halves with melted butter.
  • Sprinkle the zucchinis with granulated garlic, then layer with Parmesan cheese. Season with fresh ground pepper and kosher salt to taste.
  • Bake in the preheated oven for about 20-25 minutes until tender and the cheese is lightly golden brown.

Notes

Add fresh herbs like thyme or rosemary for extra flavor. These can be a side dish or main course, and pair well with salads or grilled chicken.
