Preparation

  • Preheat your oven to 400°F (200°C).
  • In one bowl, beat the eggs.
  • In another bowl, mix the breadcrumbs and Parmesan cheese together.
  • Season the chicken breasts with salt and pepper.

Cooking

  • Dip each chicken breast in the beaten eggs, then coat them with the breadcrumb and cheese mixture, ensuring they are evenly covered.
  • Heat the olive oil in a skillet over medium-high heat.
  • Cook the chicken for 2-3 minutes on each side until they turn golden brown.
  • Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until fully cooked through.
  • Serve hot.

Notes

For extra flavor, add garlic powder or Italian seasoning to the breadcrumb mixture. Ensure that the oil is hot before adding the chicken to get a crispier outer crust. For added spice, sprinkle some red pepper flakes into the breadcrumb mixture.
