  • 8 ounces linguine or spaghetti Choose a quality pasta.
  • 4 slices bacon, chopped Can substitute with pancetta.
  • 2 large eggs Crucial for creamy texture.
  • 1 cup grated Parmesan cheese Freshly grated is best.
  • to taste Salt and black pepper Enhances flavors.

For Garnish

  • to taste Fresh parsley, chopped Optional, for garnishing.

Instructions
 

Preparation

  • Boil a large pot of salted water for pasta.
  • Add pasta and cook according to package instructions until al dente.
  • Drain pasta, reserving about a cup of pasta water.

Cooking

  • In a large skillet, cook chopped bacon over medium heat until crispy, about 4-5 minutes.
  • Whisk together eggs and Parmesan in a bowl.
  • Add hot, drained pasta to the skillet with bacon and toss gently.
  • Pour in the egg and cheese mixture and quickly toss everything together.
  • If the sauce is too thick, add reserved pasta water until desired consistency.
  • Season with salt and black pepper, adjusting to taste.

Serving

  • Serve hot from the skillet, garnished with chopped parsley.

Notes

For perfect results, remember to cook pasta in salted water. Serve with a side salad and crusty garlic bread for a complete meal. Leftovers can be reheated by warming in a skillet with a splash of water or cream.
