Ingredients
  

Main ingredients

  • 1 cup peanut butter Use creamy or crunchy based on preference.
  • 1/2 cup butter, softened Make sure to soften for easier mixing.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup chopped peanuts Can replace with different nuts if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, mix together the peanut butter, butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt, then gradually add it to the peanut butter mixture until combined.
  • Fold in the mini marshmallows and chopped peanuts.
  • Pour the batter into the prepared baking pan, spreading it evenly.

Baking

  • Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into squares and serving.

Notes

Serve at room temperature, with a scoop of vanilla ice cream or extra chopped peanuts on top. Store in an airtight container at room temperature for up to a week, or refrigerate for two weeks. For longer storage, freeze in a sealable bag for up to three months.
