Ingredients
  

Base Ingredients

  • 1 cup peanut butter Smooth peanut butter is best.
  • 1/2 cup butter, softened Bring to room temperature for easy mixing.
  • 1 cup brown sugar Packed brown sugar works best.
  • 1 cup granulated sugar
  • 2 large eggs Room temperature eggs are preferable.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups mini marshmallows Can substitute with marshmallow fluff.
  • 1 cup chopped peanuts

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, mix together the peanut butter, butter, brown sugar, and granulated sugar until smooth. Beat in the eggs and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt, then gradually add it to the peanut butter mixture until combined.
  • Fold in the mini marshmallows and chopped peanuts.
  • Pour the batter into the prepared baking pan, spreading it evenly.

Baking

  • Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  • Allow to cool before cutting into squares and serving.

Notes

These bars can be served warm or at room temperature. For added richness, consider mixing in chocolate chips. Store leftovers in an airtight container at room temperature for up to five days, or freeze for up to three months.
