Ingredients
  

For the filling

  • 1 can (15 oz) sliced peaches, drained and chopped You can use fresh peaches instead.
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon Feel free to experiment with other spices.
  • 1 tsp cornstarch Helps thicken the peach mixture.

For the egg rolls

  • 8 pieces egg roll wrappers Ensure they are sealed tightly.
  • Vegetable oil For frying.
  • Powdered sugar For dusting.
  • Vanilla glaze or caramel sauce For drizzling.

Instructions
 

Make Filling

  • In a pan over medium heat, combine the peaches, brown sugar, cinnamon, and cornstarch. Cook for 3–4 minutes until the mixture thickens. Let it cool.

Assemble Rolls

  • Place 2 tablespoons of the filling in each egg roll wrapper. Fold and seal the edges with a little water.

Fry

  • Heat vegetable oil to 350°F (175°C). Fry the egg rolls for 2–3 minutes on each side or until they are golden brown. Drain them on paper towels.

Serve

  • Dust the fried egg rolls with powdered sugar and drizzle with vanilla glaze or caramel sauce. Serve them warm!

Notes

If you have any leftovers, store them in an airtight container in the fridge. They are best eaten within a couple of days. To reheat, place them in the oven at 350°F (175°C) for about 10 minutes to crisp them up again.
