  • 1 teaspoon baking soda Helps the cake rise beautifully.
  • 1 teaspoon baking powder Works with the baking soda to give the cake a lovely lift.
  • 1/2 teaspoon salt Balances all the sweetness and enhances the flavors.
  • 2 cups fresh peaches, peeled and sliced The star of the show that adds juicy sweetness.

Topping Ingredients

  • 1/2 cup oatmeal Adds a lovely texture to the topping.
  • 1/2 cup brown sugar For that irresistible sweet crunch on top.
  • 1/4 cup flour Helps bind the crumb topping together.
  • 1/4 teaspoon cinnamon A sprinkle of warmth that elevates the flavors.
  • 1/4 cup melted butter Ensures the topping is golden and delicious.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Pour half of the batter into the prepared baking dish.
  • Layer the sliced peaches evenly over the batter.
  • Spread the remaining batter over the peaches.
  • In a separate bowl, mix the oatmeal, brown sugar, flour, cinnamon, and melted butter for the topping. Sprinkle it evenly over the batter.
  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool before serving.

Notes

A little trick I've learned is to sprinkle a bit of lemon juice over the peaches before adding them to the batter. It brightens their flavor and adds a delicious tang!
