Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

Main Ingredient

  • 1 1/2 cups chopped fresh or frozen peaches

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together melted butter, eggs, vanilla extract, and milk.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the chopped peaches.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool slightly before serving.

Notes

Serve warm with a pat of butter. Store in an airtight container at room temperature for up to three days, or freeze individually wrapped for up to three months. For extra flavor, consider adding cinnamon or nuts.
