  • 1/2 cup Light corn syrup
  • 1/4 cup Water
  • 1/4 teaspoon Salt
  • 1 cup Unsalted peanuts Can substitute with roasted mixed nuts for different flavor.
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract

Preparation

  • Prepare your workspace by clearing a clean, dry surface to pour the brittle onto once cooked. A greased baking sheet or silicone mat works well.
  • Gather and measure out all your ingredients to make the cooking process smoother.

Cooking

  • In a medium saucepan, mix the sugar, light corn syrup, water, and salt together. Cook over medium heat, stirring until sugar has dissolved.
  • Increase heat and allow the mixture to boil without stirring until it turns golden brown, around 300°F.
  • Remove from heat and quickly stir in the peanuts, butter, and vanilla extract.
  • Pour the mixture onto the prepared baking sheet, spreading it as evenly as possible.
  • Allow the brittle to cool completely at room temperature before breaking into pieces.
  • Store the brittle in an airtight container to keep fresh.

Notes

Be patient while cooking to avoid burnt sugar. Use a candy thermometer for accuracy. Feel free to experiment with different nuts.
