  • 1 teaspoon Baking Soda Makes the brittle light and airy.
  • 2 tablespoons Butter Adds richness.
  • 1 teaspoon Vanilla Extract Adds a wonderful flavor.

Preparation

  • Prepare your workspace by lining a large baking sheet with parchment paper.
  • In a heavy-bottom pot, combine granulated sugar and light corn syrup, stirring until well mixed.

Cooking

  • Heat the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.
  • Once boiling, add the raw peanuts and stir until the mixture comes back to a boil.
  • Continue cooking, stirring often, until the mixture reaches a beautiful golden color, about 10-15 minutes.
  • When golden, remove from heat and quickly add salt, baking soda, butter, and vanilla extract.
  • Pour the hot mixture onto the prepared baking sheet and spread it out evenly.
  • Allow the peanut brittle to cool completely before breaking it into pieces.

Notes

Tips for perfect results include using a candy thermometer for accuracy and storing leftovers in an airtight container at room temperature. Feel free to add chocolate for an even more delightful treat.
