Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the peanut butter, sugar, egg, baking soda, and vanilla extract.
  • Mix until smooth and creamy.
  • Using a tablespoon, scoop out some dough and roll it into balls. Place the dough balls on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with a fork to create a criss-cross pattern.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
