Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 teaspoon vanilla extract

Add-ins

  • 1/2 cup chopped pecans plus extra for topping if desired

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar until well mixed.
  • Add in the eggs and vanilla extract, and beat until smooth.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the chopped pecans.

Baking

  • Fill muffin cups with the batter.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Let cool before serving.

Notes

Best enjoyed warm, serve with maple syrup for added sweetness. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Measure ingredients accurately for best results and do not overmix the batter.
