  • 1 cup unsalted butter, softened Make sure your butter is at room temperature.
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt Can reduce if using salted butter.
  • 1 cup chopped pecans Chop finely for even distribution.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Gradually add in the flour and salt, mixing until just combined.
  • Fold in the chopped pecans and vanilla extract.
  • Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  • Flatten each ball slightly with the palm of your hand.

Baking

  • Bake for 12-15 minutes or until the edges are golden.
  • Allow to cool on a wire rack before serving.

Notes

Serve Pecan Sandies with coffee or tea, and consider dusting them with powdered sugar for extra sweetness. Store in an airtight container for up to a week, or freeze for longer storage.
