Ingredients
  

For the crust

  • 1 cup all-purpose flour This is your foundation for a wonderful crust.
  • 1/2 cup unsalted butter, softened Butter adds rich flavor and tender texture.
  • 2 tablespoons sugar A touch of sweetness that complements the pecans.

For the filling

  • 1/2 cup packed brown sugar Adds a deep caramel-like flavor.
  • 1 large egg Binds everything and creates a custard-like filling.
  • 1 teaspoon vanilla extract Provides comforting warmth.
  • 1 cup pecans, chopped The star of the show for flavor and crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, butter, and sugar until the mixture resembles coarse crumbs.
  • Press the buttery mixture into the bottom and up the sides of a mini muffin tin to shape about 24 individual crusts.
  • In another bowl, whisk together the brown sugar, egg, and vanilla extract until smooth and creamy.
  • Fold in the chopped pecans into the filling mixture.
  • Pour the pecan mixture into each prepared pastry shell, filling them about three-quarters full.
  • Bake for about 20-25 minutes until the tops are golden and the filling is set.
  • Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack.
  • Allow to cool completely before serving.

Notes

For extra crispy crust, use cold butter. Do not overmix the dough. Let filling sit before pouring into crust to meld flavors. Enjoy with whipped cream or ice cream.
