  • 1 tablespoon Worcestershire sauce A splash of this sauce brings everything together beautifully.

For Garnish

Preparation

  • Season the filet mignon steaks generously with salt and crushed peppercorns. Allow them to sit for about 10 minutes.

Cooking the Steaks

  • Heat 2 tablespoons of olive oil in a heavy skillet over medium-high heat.
  • Sear the steaks until they reach your desired level of doneness (about 4-5 minutes per side for medium-rare).
  • Remove the steaks from the skillet and let them rest on a plate.

Making the Sauce

  • Lower the heat and add 1/4 cup of brandy to deglaze the pan, scraping up the browned bits.
  • Reduce the heat to medium and stir in 1 cup of heavy cream, 1 tablespoon of Dijon mustard, and 1 tablespoon of Worcestershire sauce.
  • Cook until the sauce thickens slightly, about 5-6 minutes.

Combining and Serving

  • Return the steaks to the skillet and coat them with the sauce for an additional minute.
  • Transfer to plates, spoon over the sauce, and garnish with chopped parsley.

Notes

For a deeper flavor in the sauce, try adding a dash or two of soy sauce. For sides, pair with creamy mashed potatoes or a simple green salad.
