  • 1 box Jiffy cornbread mix
  • 1 can cream corn
  • 1 can whole kernel corn, drained
  • 2 large eggs
  • 1 stick butter, melted
  • 1 cup sour cream

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the Jiffy cornbread mix, cream corn, whole kernel corn, eggs, melted butter, and sour cream.
  • Mix until well combined.
  • Pour the mixture into a greased casserole dish.
  • Bake for 45-50 minutes, or until the top is golden brown and a toothpick comes out clean.
  • Let cool for a few minutes before serving.

Notes

For extra sweetness, consider adding a bit of sugar to the mix. You can add jalapeños for a spicy kick. If you prefer a cheesier taste, stir in some shredded cheese before baking. If you have leftovers, let the casserole cool completely and store it in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months.
