  • 2 tbsp olive oil Adds richness and helps in roasting.

  • to taste pepper Brings out the natural sweetness.
  • 1 tsp honey Optional, for additional sweetness.
  • as needed fresh herbs Optional for garnish, enhances flavor.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel the carrots and cut them into strips, aiming for uniform thickness.
  • Place carrot strips in a bowl, drizzle with olive oil, and add salt and pepper. Coat thoroughly.
  • If desired, drizzle honey over the carrots.
  • Spread the carrots in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for 20-25 minutes, tossing halfway through to ensure even browning.
  • Remove from oven when tender and slightly caramelized.

Serving

  • Let cool for a minute and garnish with fresh herbs before serving.

Notes

For crispier carrots, roast a little longer and avoid overcrowding the baking sheet. Leftovers can be used in salads or wraps.
