Preparation

  • Thinly slice the red onion as uniformly as possible, using a sharp knife or mandoline.
  • Grab a clean mason jar or bowl to place the sliced onions inside.
  • In a small saucepan, combine white vinegar, water, sugar, salt, red chili flakes, and black peppercorns. Heat over medium until it simmers and the sugar and salt dissolve.
  • Pour the hot brine over the onions in the jar, ensuring they are completely submerged.
  • Let the jar cool to room temperature for about 10-15 minutes.
  • Cover the jar and refrigerate for at least 30 minutes before serving for optimal flavor.
  • Serve the pickled onions as toppings for tacos, salads, or sandwiches.

Notes

For a deeper flavor, try substituting apple cider vinegar for the white vinegar. Use fresh ingredients for best texture. You can also experiment with adding fresh herbs or spices to the brine.
