  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1/2 cup Butter, softened
  • 1 cup Crushed pineapple, drained Make sure to drain well
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Chopped nuts (optional) Use walnuts or pecans for added crunch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease your loaf pan.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract and drained crushed pineapple.
  • In another bowl, combine the all-purpose flour, baking soda, and salt. Whisk them together.
  • Gradually add the dry mixture to the wet batter, mixing until just combined.
  • If using nuts, fold them into the batter.
  • Carefully pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake in the preheated oven for about 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Make sure to drain the pineapple well to avoid a soggy bread. Don't overmix; a few lumps are fine. Let the bread cool completely before slicing to hold its shape better.
