  • 2 tablespoons olive oil Used for sautéing.

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced chicken and cook until browned.
  • Add the onion, bell pepper, and garlic, and sauté until softened.
  • Stir in the rice and cook for another minute.
  • Add the chicken broth, pineapple chunks, and soy sauce.
  • Bring to a boil, then reduce heat to low and cover.
