Cooking Steps

  • Heat the olive oil in a large skillet over medium heat.
  • Sauté the onion until soft and translucent, about 5 minutes, then add garlic and red bell pepper, cooking for another 2-3 minutes.
  • Add the cubed chicken breast and cook for 5-7 minutes until browned.
  • Stir in the cubed pineapple and jasmine rice, mixing all ingredients.
  • Pour in enough water or chicken broth to cover the rice, about 2 cups.
  • Bring to a boil over high heat.
  • Once boiling, reduce heat to low, cover, and let it simmer for 15-20 minutes.
  • Fluff the rice gently with a fork after it has absorbed all the liquid.
  • Taste and adjust seasoning with salt, pepper, or soy sauce.
  • Serve warm.

Notes

For a personal touch, add a dash of soy sauce or sesame oil. Store leftovers in an airtight container for 3-4 days.
