Preparation

  • Preheat your oven to 350°F (175°C).
  • Melt the unsalted butter in a microwave-safe bowl or on the stovetop and pour it into a 9-inch round cake pan.
  • Sprinkle brown sugar evenly over the melted butter in the pan.
  • Arrange pineapple slices over the brown sugar, placing a maraschino cherry in the center of each slice.
  • In a mixing bowl, beat the eggs and stir in vanilla extract.
  • In another bowl, whisk together flour, baking powder, and salt.
  • Gradually mix the dry ingredients with the egg mixture until smooth.
  • Pour the batter over the pineapple and cherries in the pan.

Baking

  • Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool for about 10 minutes, then invert onto a serving plate.

Serving

  • Serve warm, optionally with whipped cream or vanilla ice cream.
