Ingredients
  

Meatballs

  • 1 pound Pork meatballs Homemade or store-bought
  • 1 pound Beef meatballs Homemade or store-bought

Vegetables

  • 1 medium Onion, chopped Adds sweetness and depth
  • 2 medium Carrots, chopped Adds color and sweetness
  • 2 stalks Celery, chopped For base flavor
  • 2 cloves Garlic, minced Adds aroma
  • 2 cups Fresh spinach Nutrient-rich and adds color

Pasta

  • 1 cup Acini di pepe pasta Soaks up flavor without becoming mushy

Broth and Seasonings

  • 6 cups Chicken or beef broth Base of the soup
  • to taste Salt Adjust based on broth used
  • to taste Pepper
  • 1 teaspoon Italian herbs Optional for extra flavor

Instructions
 

Preparation

  • In a large pot, warm up your broth over medium heat.
  • Add the chopped onions, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until softened.

Cooking

  • Gently drop in the pork and beef meatballs.
  • Let the meatballs cook for about 10-15 minutes until they float to the surface.
  • Stir in fresh spinach and a handful of acini di pepe.
  • Season with salt, pepper, and dried herbs to taste.
  • Cover and let everything simmer for about 20 minutes.
  • Stir and taste, adjusting seasonings as needed.

Notes

For perfect results, sauté the veggies slowly to maximize flavor. It stores well in airtight containers for up to three days.
