  • 2 pounds potatoes Choose waxy potatoes like red or new potatoes for creamier texture.
  • 1 cup mayonnaise For a healthier option, consider using Greek yogurt instead.
  • 1/4 cup Dijon mustard Adjust amount to taste.
  • 1/2 cup diced celery Adds crunch and flavor.
  • 1/2 cup diced onion Can be adjusted based on preference.
  • 1/4 cup chopped fresh parsley For garnish and added freshness.
  • Salt and pepper to taste Adjust seasoning as needed.
  • 2 pieces hard-boiled eggs Optional ingredient, adds richness.

Preparation

  • Boil the potatoes in salted water until tender, about 15-20 minutes.
  • Drain and let the potatoes cool, then peel and dice.
  • In a large bowl, mix together the mayonnaise, Dijon mustard, diced celery, diced onion, and chopped parsley.
  • Add the cooled potatoes to the dressing and gently stir to combine.
  • Season with salt and pepper to taste.
  • If desired, chop the hard-boiled eggs and fold them into the salad.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

Potato salad can be served chilled or at room temperature. It's a great side dish for grilled meats or can be enjoyed on its own. Garnish with extra parsley or sliced hard-boiled eggs for presentation. Leftovers can be stored in an airtight container in the refrigerator and are best eaten within 3-5 days.
