Ingredients
  

Main Ingredients

  • 2 pounds potatoes Waxy potatoes like red or Yukon Gold are best.
  • 1 cup mayonnaise For a lighter version, Greek yogurt can be used.
  • 1 tablespoon mustard
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/4 cup pickle relish
  • Salt and pepper to taste
  • Paprika for garnish

Instructions
 

Preparation

  • Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  • Once cooled, peel and cube the potatoes.

Mixing

  • In a large bowl, combine the mayonnaise, mustard, celery, onion, and pickle relish. Mix well.
  • Gently fold in the cubed potatoes and season with salt and pepper.

Chilling

  • Chill in the refrigerator for at least an hour before serving.
  • Garnish with paprika before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Stir before serving again. You can also add hard-boiled eggs or bacon for extra flavor.
