Ingredients
  

Main Ingredients

  • 4 pounds Prime rib roast typically one bone per two people
  • 3 tablespoons Kosher salt to taste
  • 3 tablespoons Cracked pepper to taste
  • 2 tablespoons Olive oil to help everything stick
  • 4 cloves Garlic fresh, crushed if possible
  • 2 sprigs Fresh rosemary for flavor
  • 2 sprigs Fresh thyme for flavor

Optional Seasonings

  • 1 teaspoon Smoked paprika for added flavor
  • 2 tablespoons Grated horseradish mix in for a kick

Instructions
 

Preparation

  • Take the prime rib roast out of the fridge and let it come to room temperature for at least an hour.
  • Preheat your oven to 450°F.
  • Pat the roast dry and rub it all over with olive oil, kosher salt, cracked pepper, crushed garlic, rosemary, and thyme.

Cooking

  • Roast the prime rib at 450°F for 20 minutes to develop a crust.
  • Reduce the oven temperature to 325°F and continue roasting until the internal temperature reaches 120°F for medium rare.
  • Remove from the oven and tent with foil. Let it rest for 20-30 minutes before carving.
  • Slice against the grain into thick slices, and reserve the bones for additional flavor.

Notes

For sides, consider roasted potatoes, garlicky green beans, or a light salad. Pair with horseradish cream or red wine au jus for a great finish.
