  • 1 cup pumpkin puree Keeps the bread moist.
  • 1/2 cup vegetable oil Adds richness.
  • 4 large eggs Binds the ingredients.
  • 1 teaspoon vanilla extract Rounds out the flavors.

Optional Ingredients

For the Glaze

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a loaf pan.
  • In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves.
  • In another bowl, blend the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  • Gradually stir the dry ingredients into the wet ingredients gently.
  • Fold in nuts or raisins if using.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for about 60 minutes or until a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.

Glaze

  • Mix the powdered sugar, milk, and cinnamon until smooth and drizzle over the cooled bread.

Notes

Roasting your own pumpkin can enhance the flavor. Don’t skip the eggs; they keep the bread moist. Use foil to cover the top if it browns too quickly.
