  • 1 cup heavy cream Adds richness and smooth mouthfeel.
  • 2 teaspoons vanilla extract Enhances the flavor.
  • 3 large eggs Help bind the ingredients.
  • 2 teaspoons pumpkin spice A mix of spices that brings fall flavors to life.
  • 1 pinch salt Balances the sweetness.

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Mix until combined and press firmly into a 9-inch pie pan.
  • In another large bowl, beat together the softened cream cheese, remaining sugar, and vanilla extract until smooth.
  • Add in the pumpkin puree, pumpkin spice, and a pinch of salt. Mix until combined.
  • Incorporate eggs, one at a time, mixing well after each addition.
  • Pour in the heavy cream and mix until smooth.
  • Pour the pumpkin cheesecake filling into your prepared crust, spreading it out evenly.

Baking

  • Bake in the preheated oven for about 50-60 minutes, until the edges are set and the center has a slight jiggle.
  • Allow the pie to cool at room temperature and then refrigerate for at least 3 hours, ideally overnight.

Notes

For an adventurous twist, swap graham cracker crumbs with crushed ginger snaps. Use room-temperature cream cheese for easier blending and be sure to respect the chilling time for best flavor.
