Ingredients
  

For the cake

  • 2 cups All-purpose flour
  • 1 cup Pumpkin puree Fresh or canned
  • 1 cup Sugar
  • 1/2 cup Butter, softened
  • 1/2 cup Milk Room temperature
  • 2 large Large eggs Room temperature
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

For the filling

  • 1 cup Brown sugar
  • 1 tablespoon Cinnamon

For the glaze

  • 1/2 cup Powdered sugar
  • 2 tablespoons Milk Adjust for drizzling consistency

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Gather all ingredients and place them at room temperature.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Mix in the pumpkin puree, milk, and eggs until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined.

Assembly

  • In a small bowl, mix the brown sugar and cinnamon for the filling.
  • Pour half of the batter into a greased 9x13 inch baking dish and smooth it out evenly.
  • Sprinkle the cinnamon filling over the first layer of batter.
  • Pour the remaining batter on top and smooth it out.

Baking

  • Bake for 30-35 minutes until golden brown and a toothpick inserted in the center comes out clean.

Glaze

  • While the cake is cooling, whisk together powdered sugar and milk until smooth and rich.

Notes

Add a pinch of favorite spices for extra flavor. Serve warm or at room temperature, possibly with whipped cream or ice cream.
