Ingredients
  

For the crust

  • 3 cups Ginger snap cookies
  • 6 tablespoons Unsalted butter (melted)

For the cream cheese layer

  • 1 8-ounce package Cream cheese (room temperature)
  • 1/4 cup Granulated sugar
  • 1 cup Whipped topping (thawed)

For the pumpkin layer

  • 1 5.1-ounce package Instant vanilla pudding mix
  • 1 cup Pumpkin puree
  • 1 cup Milk (cold)
  • 2 teaspoons Pumpkin pie spice (or to taste)

For the whipped cream topping

  • 1 cup Heavy whipping cream
  • 1/4 cup Powdered sugar
  • To taste Ground cinnamon For sprinkling before serving

Instructions
 

Preparation

  • Grease an 8x8 baking dish with butter or shortening.

Making the Crust

  • Place the ginger snap cookies into a food processor and blend until finely chopped, about 30 seconds.
  • While the food processor is running at low speed, slowly pour in the melted butter until the mixture resembles damp sand.
  • Pour the mixture into the prepared baking dish and firmly press into an even layer. Place the dish in the freezer for at least 20 minutes.

Crafting the Cream Cheese Layer

  • In a medium mixing bowl, combine the softened cream cheese and granulated sugar. Beat with an electric mixer until smooth.
  • Fold in the whipped topping gently.
  • Spread the cream cheese mixture over the crust evenly and chill for about 1 hour.

Creating the Pumpkin Layer

  • In a large bowl, mix the instant vanilla pudding with cold milk and whisk until thickened.
  • Add the pumpkin puree and pumpkin pie spice, whisk until smooth.
  • Fold in another cup of whipped topping.
  • Spread the pumpkin mixture over the cream cheese layer and chill for another hour.

Topping it Off

  • Combine heavy whipping cream and powdered sugar in a medium bowl. Beat until stiff peaks form, about 5 minutes.
  • Spread the whipped cream over the pumpkin layer, cover, and chill for at least 4 hours, or overnight.

Serving

  • Sprinkle with ground cinnamon just before serving.

Notes

Perfect for Thanksgiving and gatherings. Adjust the pumpkin pie spice according to your taste preferences.
