Crumb Topping

  • 1/4 cup butter For crumb topping.
  • 1/2 cup flour Helps create crumb texture.
  • 1/4 cup brown sugar Sweetens the crumb topping.

Glaze

  • 1/2 cup powdered sugar For glaze.
  • 1 tbsp maple syrup Adds delightful flavor.
  • 1/2 tsp cinnamon For glaze flavor.
  • 1-2 tbsp milk To loosen glaze.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners.
  • In a large bowl, mix pumpkin puree, both sugars, vegetable oil, eggs, and vanilla extract until combined.
  • In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
  • In a small bowl, mix together crumb topping ingredients until crumbly.
  • Spoon batter into the muffin tin, filling about two-thirds full, and sprinkle crumb topping on each.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • While muffins bake, mix powdered sugar, maple syrup, cinnamon, and milk to make a smooth glaze.
  • Once baked, let muffins cool in the pan for about 5 minutes before transferring to a wire rack.
  • Drizzle glaze over the muffins once cool.
  • Serve warm and enjoy!

Notes

For best results, ensure ingredients are at room temperature. Add nuts or chocolate chips if desired. Store leftovers in an airtight container for up to three days or freeze for two months.
