Ingredients
  

Dry Ingredients

  • 1 1/2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tsp Baking powder Ensure freshness for better rise
  • 1 tsp Baking soda Ensure freshness for better rise
  • 1/2 tsp Salt
  • 1 tsp Cinnamon Adding extra cinnamon enhances flavor
  • 1/2 tsp Nutmeg

Wet Ingredients

  • 1/2 cup Vegetable oil
  • 1 cup Pumpkin puree
  • 2 Large eggs
  • 1 tsp Vanilla extract

Crumb Topping

  • 1/2 cup Brown sugar For crumb topping
  • 1/4 cup Butter Melted, for crumb topping
  • 1/2 cup Flour For crumb topping

Glaze

  • 1/2 cup Maple syrup
  • 1/2 tsp Cinnamon For glaze

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with muffin liners.
  • In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, combine the wet ingredients: vegetable oil, pumpkin puree, eggs, and vanilla extract. Whisk until blended.
  • Pour the wet ingredients into the dry mixture and mix gently.
  • Fill each muffin cup about two-thirds full with the batter.

Baking

  • In a small bowl, mix together brown sugar, melted butter, and flour for the crumb topping.
  • Sprinkle the crumb topping over each muffin.
  • Bake the muffins in the preheated oven for about 18-20 minutes, checking with a toothpick at 18 minutes.
  • While the muffins bake, whisk together the maple syrup and cinnamon for the glaze.
  • Once out of the oven, let them cool for a few minutes before glazing.
  • Drizzle the glaze over the cooled muffins.
  • Allow the muffins to cool completely and enjoy!

Notes

Try adding chopped walnuts or chocolate chips to the batter for a fun twist. Always use fresh baking powder and soda for best results.
