Ingredients
  

Main Ingredients

  • 1 tbsp olive oil For sautéing.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth Can use chicken broth if not strictly vegetarian.
  • 1 cup green beans, trimmed and halved
  • 1 cup corn (fresh or frozen)
  • 1/2 cup peas (fresh or frozen)
  • 1/2 tsp dried thyme
  • Salt & pepper to taste

Instructions
 

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Sauté the onion and garlic until soft.
  • Add the carrots, celery, and potatoes. Cook for 5 minutes.
  • Stir in the diced tomatoes, vegetable broth, thyme, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
  • Add the green beans, corn, and peas. Simmer for another 10 minutes or until all the veggies are tender.
  • Adjust the seasoning to taste and serve warm!

Notes

This soup is very flexible, use any vegetables you have on hand. For a heartier version, add cooked pasta or rice. If you want a little heat, add a pinch of red pepper flakes while cooking. Leftover soup can be stored in the fridge for 3-4 days or frozen for up to 3 months.
