Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually blend the dry ingredients into the creamed mixture until just combined.
  • Stir in the rolled oats, toasted rice cereal, shredded coconut, and chocolate chips.

Baking

  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto ungreased cookie sheets, leaving enough space between each cookie.
  • Bake for 10-12 minutes or until the edges are golden and the centers appear soft.
  • Cool the cookies on the cookie sheet for 5 minutes before transferring to a wire rack.
