Ingredients
  

Base and Topping

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted

Filling

  • 2 cups fresh raspberries Can be substituted with frozen raspberries (thawed and drained).
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • In a bowl, combine flour, oats, brown sugar, granulated sugar, salt, and baking powder.
  • Stir in the melted butter until the mixture is crumbly.
  • Press half of the mixture into the bottom of the prepared baking dish.
  • In another bowl, toss raspberries with lemon juice and cornstarch. Spread the raspberry mixture over the crust.
  • Crumble the remaining mixture over the raspberries.

Baking

  • Bake for 30-35 minutes, or until the topping is golden brown.
  • Allow to cool before cutting into bars.
  • Serve and enjoy!

Notes

Serve Raspberry Crumble Bars warm or at room temperature. They are delicious on their own or with a scoop of vanilla ice cream or whipped cream. Sprinkle with powdered sugar if desired. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. For longer storage, freeze for up to 2 months.
