  • 4 cups Vegetable or chicken broth Any good broth is perfect here.
  • 1 cup Diced tomatoes
  • 1 cup Chopped spinach or kale Adds color and nutrition.
  • 1 medium Diced onion For sautéing.
  • 2 cloves Minced garlic Enhances flavor.
  • 1 teaspoon Italian seasoning For authentic Italian flavor.
  • to taste Salt and pepper Add according to preference.
  • for serving Grated Parmesan cheese Adds creaminess.
  • for garnish Fresh basil Optional for garnish.

Cooking Steps

  • Heat a splash of olive oil in a large pot over medium heat.
  • Add the diced onion and cook it for about 5 minutes until soft and translucent.
  • Add minced garlic and sauté for an additional minute.
  • Pour in the broth and bring it to a boil.
  • Add diced tomatoes and Italian seasoning, lower the heat, and let it simmer for a few minutes.
  • Add ravioli according to package instructions and let them cook.
  • Stir in chopped spinach or kale and cook for about 2 more minutes until wilted.
  • Add salt and pepper to taste.
  • Serve in bowls and top with grated Parmesan cheese.
  • Garnish with fresh basil if desired.

Notes

For richer flavor, use homemade broth. You can substitute with cheese or meat-filled ravioli. Store leftovers in an airtight container in the fridge for up to three days.
