Ingredients
  

Rhubarb Filling

  • 8 cups rhubarb, cut in 3/4 inch pieces Use fresh rhubarb for best flavor.
  • 1/2 cup white sugar Adjust according to taste.
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon

Topping

  • 1 cup flour
  • 3/4 cup brown sugar
  • 1/2 cup rolled oats For added texture.
  • 1/2 cup melted butter

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the rhubarb, white sugar, 1/4 cup flour, and cinnamon. Mix well.
  • Place the rhubarb mixture in a prepared baking dish.
  • In another bowl, combine the topping ingredients: 1 cup flour, brown sugar, rolled oats, and melted butter. Mix until crumbly.
  • Sprinkle the topping evenly over the rhubarb mixture.

Baking

  • Bake in the preheated oven for 35 minutes or until the topping is golden brown.
  • Remove the baking dish from the oven and let it sit for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for added sweetness and creaminess. Store leftovers in the refrigerator for up to 3 days or freeze for 2-3 months.
