Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy (about 3-5 minutes).
  • Beat in the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract and peppermint extract.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  • Gradually blend the dry mixture into the wet ingredients until just combined.
  • Gently fold in the semi-sweet chocolate chips.
  • Drop rounded portions of dough onto ungreased baking sheets, leaving space between each cookie.

Baking

  • Bake in the preheated oven for about 10-12 minutes, until the edges are firm and the centers remain soft.
  • Sprinkle crushed candy canes on top as soon as the cookies come out of the oven.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks.

Notes

To get delightful crispy edges and soft centers, avoid overbaking. Increase peppermint extract for a mintier flavor if desired. These cookies are perfect with hot cocoa or coffee.
