  • 48 pieces Ritz Crackers
  • 7 ounces marshmallow creme or marshmallow fluff
  • 24 ounces chocolate almond bark or Ghirardelli melting wafers

Optional Toppings

  • 1/2 cup graham cracker crumbs
  • 1/2 cup marshmallow bits
  • 1/2 cup mini chocolate chips
  • 1/2 cup sprinkles or jimmies

Instructions
 

Preparation

  • Place almond bark in a microwave-safe bowl and melt it according to the package directions.
  • Line 2 large baking sheets with parchment paper or wax paper.
  • Place half of the Ritz crackers on the baking sheets.
  • Put 1 to 2 teaspoons of marshmallow creme in the center of each cracker, greasing your spoon for easy removal.
  • Top each marshmallow cracker with another Ritz and gently press them together to create an even layer of marshmallow.
  • Use small tongs or a fork to dip the s'mores cracker sandwich into the melted chocolate, then place on the lined baking sheet.
  • Repeat the process with the remaining crackers.
  • Decorate if desired with crushed graham crackers, marshmallow bits, mini chocolate chips, or sprinkles.

Finishing

  • Let the cookies sit until the chocolate hardens.

Notes

For best results, ensure the chocolate is fully melted before dipping. If marshmallow creme is too sticky, lightly grease your spoon or fingers. Experiment with toppings for a unique twist.
