Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel the potatoes if desired, and chop them into evenly sized pieces (1 to 2-inch chunks).
  • Boil the potatoes in a pot of salted water for about 10 minutes until slightly tender.
  • Drain the potatoes in a colander and let them steam dry for a couple of minutes.
  • Toss the drained potatoes with olive oil, salt, and pepper in a mixing bowl until well-coated.
  • Spread the potatoes onto a baking sheet in a single layer.

Cooking

  • Roast the potatoes in the preheated oven for 30-40 minutes, stirring halfway through.
  • Add fresh herbs during the last 5-10 minutes of roasting.
  • Check for crispiness; when golden brown and crispy, remove from the oven and let cool slightly before serving.

Notes

For extra crispiness, shake the potatoes in the colander after draining. Experiment with seasonings like garlic powder, paprika, or grated parmesan for variations.
