Ingredients
  

Vegetables

  • 1 pound carrots, peeled Cut into even sizes for even cooking.

Oil and Seasoning

  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic salt Add black pepper or your favorite herbs for extra flavor.

Cheese

  • 0.25 cup grated Parmesan cheese Use freshly grated for a richer taste.

Preparation

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Line a baking sheet with aluminum foil for easy cleanup.
  • In a small bowl, stir together the olive oil and garlic salt.
  • Pour the oil mixture into a large resealable plastic bag.
  • Add the peeled carrots to the bag, seal it, and shake well to coat the carrots completely in the oil mixture.

Cooking

  • Arrange the coated carrots on the prepared baking sheet.
  • Roast the carrots in the preheated oven until they are crisp-tender, about 45 minutes.
  • Sprinkle 0.25 cup of Parmesan cheese over the carrots.
  • Continue roasting until the cheese is lightly browned, which takes another 5 to 10 minutes.

Serving

  • Garnish with additional Parmesan cheese to serve, according to your taste.

Notes

Allow leftover carrots to cool completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispness. You can also add other vegetables like potatoes or zucchini, and a splash of balsamic vinegar for added flavor.
